Wagschal, Shaul. The Practical Guide to Kashruth. Philipp Feldheim. 2000. ISBN: 0873065611.
Rabbi Wagschal shows how broad a field of study kashruth is while making all the aspects easy to understand. He begins the book with a general overview of the principles of kosher foods, then gradually moves into more and more details about the particular area of kashruth he is discussing. In this way, you are free to stop reading as soon as you've gleaned enough information about a specific part of the kosher rules without having to read a lot of other things you may not be interested in. Of particular value is the comprehensive list of the blessings to be recited before eating various foods, contained in an easy-to-use table at the back of his book. The list of regulations concerning the details of food preparation can be most helpful as well.
